What I Did: I am always on the lookout for gluten free recipes for my toddler, when I came across this recipe it looked easy and healthy. After reading the many comments, suggesting that the ‘pancake’ tasted too eggy, I decided to alter the recipe slightly. Apparently, using two bananas and only one egg was a mistake.
My Result:
Next Time I Will: Next time, I will follow the directions and not try to alter the recipe. I am curious to see what the original recipe tastes like. We did eat the glop, it actually tasted WAY better than it looked.


I actually tried the original recipe, and although it failed to become fluffy pancakes as the picture suggested, it did taste good.
If an eggy taste is a problem, put in some banana extract and that should solve the problem without changing proportions of the mix.
I had the same experience. However now I just put the mixture into the pan, put it on low heat and cover it with a lid. In about 5-7 minutes, the “pancake” is completely set. I also add some rolled oats to the mixture, for more breakfast-y feel. 😛
