What I Did: I don’t know if it was because I used the buttermilk just add water mix or because I didn’t add milk and eggs but it all stuck to the bottom of the cup and I only got a small amount out. Portion control? Tastes good at least, what I could get out of it!
Next Time I Will: I’d add milk and eggs and use a regular mix.


I noticed that the photo from the recipe uses silicone wrappers instead of paper. The batter might just be too sticky for paper. I be it would work if you used silicone wrappers or a silicone muffin tray, or sprayed the paper wrappers first.
I suspect the original might have turned out similar to yours if they used paper!
Papers don’t work on low-fat baked goods. They work in cake or cake-like muffins because they have a lot of butter or oil, but these won’t have enough to “lubricate”. You need to use silicone cups or skip wrappers and just use a buttered tin. I’ve made this mistake with muffins, too.
This recipe is good for a baked pancake. Might be better texture and stick less. I agree about silicone or unlined muffin cups.
