What I Did: When I came across this project, it made me think of a perfect twist on breakfast for celebrating Dr Seuss’ birthday. I finally got around to remembering to get some bell peppers to give this a try. I was so excited to finally try this! So, I brought up the recipe, which I’d pinned to my Dr. Seuss board. I thought I’d followed the recipe to a tee! I flipped the pepper slice in my skillet a couple of times, and then added the egg. That sucker slid everywhere! I couldn’t control the egg & it refused to adhere to the pepper! And so I got this lovely outcome.
Oh! It all turned out fine.
I still made it my lunch of mine.
I stuck it on
some bread with cheese
and made it into
a grilled cheese,
if you please.
An egg and pepper grilled cheese?
Yes! Please!

Next Time I Will: As I responded to some possible tips from a friend on Facebook (which I Seussically rhymed since it was on Dr. Seuss’ Birthday):

another method - I’ll make
eggs inside peppers,
but I’ll try to bake. . . .

I’ve had luck baking eggs before, so I’m going to try an oven version instead.

I’ve tried this a few times, works great!! You do need to make sure the pan is hot, and it’s best to cook the pepper for a while so it warms up as well, flipping it once, then putting in the egg.
Also it looks like your peppers were too small. If you can find large peppers, it works better to hold the egg inside.
