What I Did: I saw this amazing-looking breakfast idea on Pinterest so I figured it couldn’t be that hard now that I finally figured out how to cook eggs over easy. I thought “I’ll just put the pepper in and pour the egg in. Worst case scenario, it overflows.” No, it leaked under the pepper and it overflowed over the egg. I couldn’t flip it because parts of it were burning while other parts were not even remotely cooked. And one yolk broke. Pretty much everything that could go wrong, did.

This was one of my first tries off Pinterest, and it worked perfectly. To make sure you do not get overflow, use large rings and head up the pan and the ring itself first, flipping once, before putting the egg in. Then you can use a lid to let the egg steam, so you do not have to flip. They worked out GREAT.
I’ve had great success with this recipe - just make sure you cut the rings thick enough so the egg doesn’t overflow. A nonstick pan is essential. I’ve been able to flip mine without the yolk breaking.
I also had success with this one. Definitely use a non-stick skillet and I cooked the ring briefly on both sides before adding the egg. That way, when I put the (not-huge) egg in (slowly!), it started cooking to the edges of the ring immediately instead of spilling out everywhere. Also, make sure your skillet isn’t too hot so that the egg has time to set up before it’s time to flip.
I see a lot of variations on this fail. Eggs in peppers, eggs in avocado, no one can seem to cook them right. Now, I’ve never tried avocado or pepper myself, but a month or two ago I tried to make what is commonly known here in Canada as Toad in a Hole (also known as eggs in a basket or eggs in a hole) and encountered the same problem, the egg seeped out under the bread. Quickly I discovered that this was because I was too impatient, and hadn’t let the bread stick to the pan enough. Which is the advice I give anyone who wants to try this and gets discouraged by all the fails. You just need to let whatever you’re using as a mold cook for a little while, so that it ‘seals’ to the pan before you put your egg in.
