What I Did: Making Mickey Mouse cupcakes for my kids birthday party-the icing was too soft and ran everywhere. Poor Mickey. 🙁

    It’s Minnie Mouse, not Mickey. She wears polka dots, he doesn’t.

    Also, use buttercream frosting, not icing.

    If you used store-bought icing, then that’s your problem. Getting a large beautiful mound of icing on a cupcake takes stiffer icing than what they sell in grocery stores. If you made the icing yourself, try adding less water/milk next time. Humidity can also be a factor. Don’t give up! Find a good buttercream recipe (there are tons of videos online on basic cake decorating) and try it again. It take practice!

    I run a cupcakery and when I first started I had a request for minnie cupcakes like this. Through trial and error I realized that the red dye will make icing runny with no hope of saving it, unless you add more sugar but then dilute the vibrant red color. They make powder dyes that I now keep on hand for red. It gives you the vibrant red and keeps consistency of icing you need.
