What I Did: I wanted to make a special cake for my daughter’s birthday, and thought a tie-dye cake would be awesome. I wanted to make sure the cake was moist, so I added an extra egg, and a box of instant pudding to my boxed cake mix. It is really, really moist! I ended up saving the cake, and the day, but covering it in whipped cream. It is delicious, and it caused a lot of laughter, so not such a failure after all.

Next Time I Will: No more rolled cakes!

    Cake mix is not for Swiss rolls, I’m afraid.

    My kids love my “tie die” cupcakes. I use 2 boxes of white cake mix as directed. I separate the batter into 4 different bowls then color it with the neon food coloring that is available at your regular market. I add at least 10 drops or more for bright colors. (More of the yellow/green) Then put a scoop of each color in the cupcake paper. You can swirl it a little bit with a toothpick if you want to, but not necessary. (Don’t swirl too much or you just get a mess) Bake as directed. Such a fun color surprise when the kids bite into them!
