I’m sorry your balls were too big and messy.
Ive made this (as a pastry chef) and its really tricky…. the mixture must be chilled completely before forming into balls (and i also like to roll them in a little more oreo dust to make them drier) then left to come to room temperature before dipping- which MUST be done in either tempered chocolate (not just melted, theres a very intensive process to temper chocolate properly) or a cocoa flavored candy melt, then left to harden completely before dipping again and the ones in the demo pic were at least double if not triple dipped to create a smoother looking shell. good luck next time!
I made these a few weeks ago for a camping trip with a bunch of guys. I made 4 dozen of them. It took me about an hour and half…no problems. I chill the balls in the freezer, let them sit for bit, then dipped them in white melts. (I get mine at Wal-Mart.) Absolutely no problems. The recipe is the problem. I NEVER use bark, or chips or bars. Only melts. Making them smaller won’t necessarily help, just using the right dipping chocolate and letting them sit and harden all the way before even thinking about touching them.
