What I Did: These strawberry lemonade cupcakes with strawberry lemon Swiss meringue buttercream frosting sounded divine! But nobody warned me about how difficult Swiss meringue buttercream is to make. Behold, a sloppy curdled mess on top of a fantastic cupcake!

Next Time I Will: follow the directions for the frosting more carefully! Apparently, the correct temperature and precise measurement of the ingredients is important! Practice makes perfect, I suppose!

    Swiss meringue was something I never got right just from reading instructions – I had to watch a video and stop ignoring the temperature details before I finally got it to work.

    Two things:
    1 – Swiss Meringue Buttercream often looks like that when it hasn’t been mixed long enough. The curdled stage eventually turns into the lumpy stage which eventually turns into the smooth and lovely stage. You possibly just needed to leave the mixer going.
    2 – This is a great recipe for an eggless SMBC-style frosting that works PERFECTLY and you don’t have to cook anything to make it work:

    I agree with Crusher- Most meringue buttercreams look like something has gone terribly wrong about 5 minutes before you should actually stop mixing. Next time trust the recipe and let it keep whipping until it reincorporates. I can’t tell you how many times someone has been watching me make buttercream and panicked because they thought I’d done something wrong, & were totally surprised when I promised them it was just not done mixing yet & they saw it come back together.
