What I Did: I made the cupcakes according to the directions. Everything was going smoothly up until I put them in the oven. Once they started baking, it was clear something wasn’t right. They poured over the top of the muffin cups. I was committed at that point, so I just cooked them until they looked done. During the course of the baking process, the chocolate chip cookie dough stuffing disintegrated leaving a big void in each cupcake. Once removed from the oven, they collapsed… except for the parts that had spilled over and baked onto the top of the muffin pan. I did my best to clean up the cupcakes, which included taking the portion of the cupcakes that spilled over onto the pan, cutting them up and shoving them into the empty void of each cupcake. They’re for my son’s birthday party at daycare, so I slapped some frosting on them to hide my disaster and will send them with him in the morning. Yes, he’s my third child. Had this happened with my first child, I would have been in full-on panic mode trying to make a new batch of cupcakes. By now I’ve realized that most of the kids will only eat the frosting anyway, so why bother?!
Next Time I Will: buy cupcakes.
